Strawberry Shortcake

Strawberry Shortcake may be itty-bitty, but she's full of big possibilities. She loves adventure and believes you can do anything if you try. She's a berry good friend who's always ready to help. She's kind and smart, and she loves her pets. With Strawberry Shortcake, things are growing better all the time.

• 1 cup all-purpose flour
• 1/2 cup confectioners' sugar
• 1/2 cup butter, melted
• 1 (8 ounce) package cream cheese, softened

• 1/2 cup white sugar
• 2 1/2 cups strawberries, sliced
• 1/2 (2 ounce) package strawberry Danish dessert mix (e.g. Junket)
• 1 cup water
  
  
  
  
  1. 1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together flour and confectioners' sugar. Stir in melted butter. Press mixture evenly into a 12 inch pizza pan.
  3. Bake in preheated oven for 15 minutes. Allow to cool.
  4. In a small mixing bowl, beat together cream cheese and white sugar until smooth. Spread over cooled crust. Arrange strawberries over cream cheese layer.
  5. Combine custard mix and water in a small saucepan. Bring to a boil while stirring frequently. Boil and stir 1 minute. Pour mixture over strawberry layer. Chill before serving.

 Lemon Meringue

Lemon Meringue owns the Lemon Salon. Lemon Meringue is very pretty and loves to fix people's hair and nails. Her salon is always busy and filled with laughter. Maybe that's why Lemon Meringue is always the first to know about anything that happens in town.

• 3 cups cake flour
• 1 teaspoon baking soda
• 1/4 teaspoon salt
• 6 eggs
• 2 cups white sugar

• 1 cup butter, softened
• 2 teaspoons grated lemon zest
• 2 tablespoons lemon juice
• 1 cup plain yogurt
  
  

Preheat oven to 350 degrees F (175 degrees C). Line cupcake pan with cupcake wrappers.

1. Sift the flour, baking soda, and salt together. Set mixture aside.
2. Separate the eggs. In a large bowl beat the egg whites until soft peaks form. Gradually add 1/2 cup of the sugar, beating until stiff glossy peaks form. Set aside.
3. Cream butter or margarine, 1 1/2 cups sugar, egg yolks, lemon zest, and lemon juice together until fluffy. Add flour mixture alternately with the yogurt to the egg yolk mixture. Gently fold in the egg whites and pour the batter into the prepared pan.

6. Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes. Let cake cool in pan for 10 minutes, then turn out onto a rack to finish cooling. Serves 12.
